It’s no secret that Mexican food is my favorite. I’ve already featured a healthy chicken enchilada recipe, and now here’s a healthy chicken fajita one! This is seriously delicious, incredibly easy to make, and won’t leave you feeling bloated the next day. Make it for your next taco night!

Ingredients:
-2 ears of corn
-1 red onion, chopped
-1 red bell pepper, sliced
-1 yellow bell pepper, sliced
-2 garlic cloves, crushed
-1 rotisserie chicken, shredded
-1/2 tsp ground cumin
-1/2 tsp ground coriander
-1 tsp smoked paprika
-juice of 1 lemon
-pepper to taste
For Avocado Cream
– 1 ripe avocado
-2 tbsp sour cream
-pepper to taste

Directions:
1. Roast the corn under a hot grill or griddle pan until cooked through. Cut the corn off the cob, then set aside.
2. Heat a large frying pan with a splash of olive oil. Sauté the onions until brown, then add the bell peppers. Once the veggie begin to soften, add the chicken, corn, garlic, spices, and lemon juice.
3. Fry for 30 seconds, then season to taste.

4. To make the avocado cream, combine the ingredients and mix until smooth.
5. To serve, fry tortillas, then add the fajita, cheese, and sour cream.
